I'm shopping for a home theater A/V receiver. Currently my plasma screen is just a monitor so switching channels can't be done thru the monitor. I'm using a dvd-r/w unit to change channels because it has a switcher inside that can change channels (much like the old VCR channel switcher when you wanted to record a tv show). I've noticed on the receiver that I'm considering buying that it as a FM coax input. Could I run my cable tv coax into this input and switch my channels through the receiver there using the receiver remote? Another detail: I don't have digital cable (therefore no cable tuning box) only analogue cable.
The Short answer is No.
The Receiver FM Coax input is for radio antenna.
Receivers do not come with TV Tuners.
Cable TV Coax connector has to be connected to a TV tuner.
Most of the VCR's come with TV tuner. You can buy a TV tuner seperately as well.

I am asking because some in the government are concerned that this is going to happen without everyone having been informed. Well... let's inform everyone.
You would need to either replace your TV with a digital set, buy an analog-to-digital converter box to enable your analog TV, or get that device with government assistance.
This is because Feb. 19, 2009 analog TV broadcast will be switched off. (The digital signal is already "in the air" free for you to access (free), by the way... in almost all places.)
That will in turn allow a lot of good things to happen in turn.
Many will cancel Pay TV!
I don't believe that this is the government's problem. If a potential backlash is anyon'e problem it is the TV Companies. That being said, I will be very upset if the government decided that they need to use my tax money to help make sure peoples' TVs work. I would like to see them take those funds and put them behind educating the public about the dangers of being sedentary. The general public in the US is fat enough, they don't need to be watching so much TV in the first place.

I'm going for an 80's-style wall of electronics here. I want sound from the analog TV and DVD player to come out of the stereo system without having to buy some sort of central receiver-thingy (display of ignorance) or having to move cables around for different functions. Help!

It'll be easier, and all you have to do is connect the headphone adapter from your tv to the stereo like I say below.

There are many ways of doing this, but I'll give you the cheapest way.
First, you'll need 3 of these (Under 10 bucks for all 3)

Okay, let's start.
1- Plug in the headphone adapter to your tv.
2- Plug in the 3 RCA splitters at these places:
a- The yellow video port on the tv
b- the red audio port on the tv
c- the white port on the tv
3- Screw in the antenna to the coaxial input on your DTV box
Plug in an audio/video cable to the DTV box.
On the other end, plug the yellow video cable to the splitter that is connected to the yellow port on the tv
Plug in the red cable to the splitter that is connected to the red port on the tv
Plug in the white cable to the splitter that is connected to the white port on the tv
4 - Plug in an audio/video cable to the DVD player.
On the other end, plug the yellow video cable to the splitter that is connected to the yellow port on the tv
Plug in the red cable to the splitter that is connected to the red port on the tv
Plug in the white cable to the splitter that is connected to the white port on the tv
5- Connect the headphone adapter from the tv to your stereo system.
That's basically it.
