I am building an MP3 jukebox and want to use a car amp to run the speakers, as I can get one quite cheap and will run sub too. Anyone know a gizmo that would allow the amp to be wired to the mains. Obviously it would not just plug in to waal as it is 12v.

Get a UK dc power supply, that meets the power specifications of the amplifier like power in rms, amperage, voltage, etc.

I want to make a unit to run my guitar through a laptop and then to a car amp and speakers. The power supply would be a small marine battery and a solar panel. Not counting the solar panel I want it to be about the size of a backpack.
Just hook the headphone output from the laptop to the amp's low level inputs. That type cord is available at any Radio Shack. A small, battery powered stomp box or three, could take the place of the laptop. So you could have distortion, chorus, and delay, hooked directly to the low level amp inputs. We used to use battery powered practise amps, like a pignose, and a few stomp boxes to practise in the outdoors. Heck, I took the guts from a fuzz and a delay, installed them in my guitar, and plugged a Mr. Microphone into my guitar jack. Then I just tuned my car stereo to the right frequency, and jammed loud while sitting on a picnic table in a park. Cold brew is optional...

This is like a physics question but you are leaving out the component of resistance and so the question is not able to be answered without making some assumptions.
The website will below will tell you how to do this experimentally using the formula P = (kg) x V x DV / Dt.
I would expect an answer between 15 and 35 HP (or 11.2 to 26.1kw.) Acceleration would be more.

If I wanted to charge the electric cars battery while driving it, how much electricity would the generator have to produce? In Watts, Amps, Volts? How big would the generator have to be?
Depends on the air resistance of the body, the rolling resistance of the tires, and a few other things. You could probably do it with 40 horsepower, which comes out to 40 hp x 746 watts/hp = 14,920 watts.
Divide that result by the motor's voltage to find the motor current. The power produced by the generator would be equal to the power used by the motor plus whatever losses are incurred in the conversion process.
Note that these are not particularly friendly numbers, which is why there are no electric cars that can go 75 mph.
I would like to know if i can play my guitar through my car's stereo system. I know theres a way if I had a cassette player but I dont, I have a cd player and its an aftermarket cd player with amp outputs on the back if that makes a difference.
yes i do got auxiliary in on my head unit but whats a 12v phono pre amp wire and a 1/4 phono jack?
with your set-up no. if your CD player has an auxiliary in, then yes, you need a 12v phono pre amp wire a 1/4 phono jack to the input of the pre amp into the stereo head. or add a dedicated power amp for the pre amp. this is what I did for the back of my truck. small patch board with 4 inputs to a pre amp to 1000w 4 channel amp (4x250w) to 4 floor monitors. Me and 2 friends rock the woods when we go camping.
