i dont think they make kicker L7 single voice coils!

You would need to wire your subs in series/parallel for a 2ohm load.
See here how to wire your sub and use option 2.

want to purchase a 15" L7 (2000 peak/ 1000rms)
want to know if i can use a 2 ohm with this amp or must
i run a 4ohm parallel

Yes you can, that amp is made to produce the most power at 2 ohms.

I was looking around an found that amp, it said the RMS =1000, an the Peak=2000. But the new 2008 zx1000 only pushes 1000 Peak an 500 RMS, plus twice the price. The 06 is $260 an the 08 is almost $400 so why are the watts different, also which one is better?

the wattage should be the same (it likely that the site you are looking at has the wrong specs)
they BOTH have 1000watts RMS @ 2ohms and 500watts RMS @ 4ohms and not stable below 2ohms-- the price is different because one is older (like when an car changes years, the price of the older drops even if they are exactly the same)
save your cash and get the older model

I have a ZX1000 Kicker amplifier and I want to know what would be better to put to that amp? 2 12 inch P3s or 2 15 inch kicker CVRs? Both handle same wattage but what would be better?

id go with the kickers.i guess

You will need either 2, 4ohm DVC subs, or 1, 2ohm DVC sub to make the 1 ohm load that you need to get the most power out of that amp. If you have 2 2ohm subs wired parallel, it will give you a .5 ohm load which is too low. If you wire 2 2ohm subs in series you won't be able to get that 1 ohm load. If you have the $, I personally would go with just 1, 2 ohm sub, and try and get that same amp sub combo (so that you would have two of those amps, and two of whatever subs) later for ridiculous bass.
