I have a 94 mustang with four speakers (two rear,two front). The specification for the speakers I bought say:

Diameter 5*7
Maximum Power Handling 100W
Continous Power Handling 50W
Frequency Response 62-21kHZ

How many channels should I get cause I might get a subwoofer later.

if you want to add an amp to these speakers get a 4 channel. dont get an amp that powers a sub and speakers like a 5 channel. get a 4 channel amp and then buy a seperate monoblock amp for your sub. monoblock amps are meant for subwoofers and will perform the best. but looking at the specs of your speakers you prob shouldnt get an amp for them. if your running an aftermarket deck then it is already pushing out 45 to 50 watts for each speaker. you'll prob end up blowing them. but if you really want to get one just get 2 amps like i said

Electrical /Acoustical engineering background will help. I have worked for a speaker company in the past, and it is way more intense than you may think. It takes months to design a simple speaker, and about an hour to put it together with the parts once they are manufactured. Easiest way to get nvolved in the industry is to start at the bottom and work your way up. Also i think most of the speaker manufacturers are on the west coast, so that may help too. And subwoofers are only 1 part of the industry, there are so many other aspects of it.

ok your looking for good sound for listening to a lot of acoustic music. i'm going to have to 2nd the guy that said Boston ACOUSTICS. the name says it all. i own a pair of there z6's and they sound freakin awesome. best car audio sound i've ever heard. there other stuff is really good too. here is a link, with good prices, you can check them out for yourself. there SL line is really good. you might also want to try ebay.

What better memphis or kicker?

yes, you could do better but you could also do a hell of a lot worse, but it all depends on the models you got also (higher end or cheaper)
