There's not really that much room to put rear speakers, so there's a table in front of where I plan to sit. Would mounting the rear speakers under the table pointing at me work?

Wow, so many great answers! I'll put them in the back, but can I put it near the ceiling? The left rear speaker will be farther away, so I'll probably have to increase volume on that one. Would this work? The 3 front speakers are on 3 sides of a 27" widescreen, while the rear speakers will be up high on the ceiling.
yes, you can do this with your speakers, you probably wont notice much difference to be fair, especially if you can put the subwoofer behind you. It would of been better to have just bought a 2.1 set up in the first place though, which gives the impression of the full surrond sound be internally altering sound frequencies. the other option with your 5.1 setup is to just use the 3 speakers set the source to prologic and not use the other 2 at all....... The additional comments you added as to were the speakers are sounds like a good set up option, instead of increasing volumes on speakers, you should be able to go into menu and change the frequencies of the sound, the high end sounds need to be ideally be done by the nearer speakers

My surround sound (5.1) works fine with Windows Media Player. When watching videos on the internet however, like on YouTube, I only get sound from the front 2 speakers.
Is this normal? I've tried reinstalling the Realtek AC 97 driver, that didn't work.

That's perfectly normal, because Youtube normally is not encoded in surround sound. 99.9999% of the time, youtube plays only through 2 channels, hence sound coming from only your 2 front speakers. 2 channels is a stereo format, much of Itunes music is in stereo as well.
One thing you can do is, if your speakers are running on a decent sound card, many sound cards have the option of channeling stereo sound through to the rear speakers as well as the two front ones, although that still does not give true surround out of a stereo source.
In the end, don't worry about it, much of the internet's media is only stereo, so you won't get surround sound out of it often.

I would like to set up some sort of wireless transmitter to take the audio signal from my HiFi amp (left+right rear channels) and send it to a receiver across the room to some speakers (I guess these would need to be active? - but need to maintain the dolby 5.1 signal etc). I already have right+left front speakers and centre speaker, so don't need a full kit. Can anyone help who has a more technical brain than me!

By doing that, you will loose the quality of the audio signal deeming the whole idea of 5.1's quality useless.... Use cable everytime!

What is the best way? The wire has to cross a couple doorways to get where I want it. Help!
Poor wire management is always an issue and a cause of many problems down the road after the system is installed. (not to mention how it looks and dealing with the wife after you duct tape wiring all along her floor and under her rugs.)
Take a look at these links for cable management ideas. Basically its a system of plastic channel or conduit that will hide and organize your cable runs. The other option is to fish the wire through the wall. Depending on your room and comfort level on this type install it can get quite involved.

I have a sony HT-SF2300. Is there a way to turn off the rear speakers and transfer their sound to the front?
You should be able to select normal surround or stereo and that will move all the sound to the front.
